No, the concept that the "We", "Our", and "Us" as used in Genesis by God refers to the Trinity does not constitute an interpretation that is "a far cry from the literal" at all. It constitutes perfectly normal usage of the words since they apply to the three persons of the Trinity. No "mental gymnastics" at all are necessary.
