I am trying to figure out what a "gluten for punishment" is. (Know Thyself, the Oracle at Delphi commanded.) To properly personify a gluten for punishment, I must have the following information: By gluten, did you mean prolamin(s) in general, or, more specifically, gliadin? And who are the "they" (as in "their" and "themselves") that seem to refer to "one"? It sounds confusing.
