I TIVO it every week and usually end up watching right before I go to bed around midnight. I wish I could be more like Chef Ramsey when dealing with my employees...I fear I would end up in court on a weekly basis however if that were the case.

The head chef/cook is a difficult position to fill and it does take a strong and efficient individual to orchestrate a kitchen when the restaurant is in the weeds. Imagine he has pick of the litter of the whole country. I on the other hand am stuck with small town usa college drop outs and suspect immigrants to take the reigns. I must say it is much harder than it appears. Imagine cooking for a family of 5 times 40 with a 30 item menu each having special orders, different meat temperatures, different sides and garnish all timed around appetizers, soup, salad etc. It's like juggling with 10 balls. It is a quite thankless position.

I must say I think the hell's kitchen higher ups call for a few morons each year for comic relief. I think Petroza will take the title. Bobby and Cory a close second. It's definately comical from an insiders standpoint. If you ever get to Green Bay for a Packer game let me know. My restaurants are more like upscale chains than full linen service gourmet restaurants. They are fresh and individualistic unlike chains however. Hopefully a cheers will indeed be in order in the near future!!
