External fat of a goat.
Most animals have their fat kind of marbled throughout the meat, but a goat has it concentrated more externally, which I would assume makes for easier collection. Fats and oils can be made into bio-diesel.
The meat of a goat is lean and high in protein, which is what most consumers want.
Also goats tend to eat weeds and small trees leaving many other crops, making it suitable for tending some crops. If BLDV is growing grasses for bio fuel and the goats eat the other weeds down, you get 2 products and no pesticides used. That kind of thinking.
Goat meat is also considered a delicacy right now and its value as a meat source is good, making it also higher probability to be profitable since the US doesn't have a big enough supply of the meat.
