As always, you forget (or deny) the power of God. I suspect that races were created at the dispersion of the Tower of Babel, and perhaps the DNA of those races eventually found its way into Noah and his family, or equally possible, God just recreated the races (for the same reason) when the population increased after Noah's day.

Scripture is silent on the matter, so any answer is by definition is pure conjecture and speculation -- not a very profitable pursuit.
