That's really going to depend on the app, the number of calls via the WOW64 API (representing overhead), the amount of time spent inside the Windows64 kernel or drivers (which may be more efficient than the 32-bit kernel/drivers) vs. the 32-bit application code, and that app's need for very large amounts of memory over 2GB (but obviously <4GB).

Without a recompile into a 64bit app, I would be surprised if there was much peformance *gain* for very many applications at all. *With* recompile, I'd expect nice gains for many/most applications.
