Its short-sighted. They'll get more "women who normally don't play games" interested if they expand their horizons. What if you just want to go for the "superior quality in food" and not be bothered by the intrusive touchscreen? Doesn't a tabletop lend itself better? Will you be able to consistently fill your restaurant every night? (don't answer this for 2 years until there is more data)
The games I've seen are similar (if not knock-offs) of existing games scattered around most bars in the country. They are not networked yet, although they will be in the future.
Also as stated, the $5-10k number being thrown around is initial production numbers. And thats per device, not a seat. You can do the math on a uWink 4 seater booth. One Surface device could be split into 4 virtual desktops so that 4 people can play simultaneously, not 2 like it is currently at uWink. Which is another thing altogether I did not like about my uWink experience.
Nolan would be a fool not to at least explore Surface - its a killer-app that will be fully exploited in 5 years.
