That's not what the article said or even implied. Are you missing the subtlety between "servers" and "processors"? If you looked at how many of those Opteron processors last quarter were 1xx series that sold for $300 or less, you'd probably be surprised. Itanium probably averages 6-7 times the Opteron ASP, and that's what goes towards revenue, and ultimately profits. This is not a "who's better" comparison. It is simply a fact.
