It might not be the worst idea. I could see them pursuing a bunch of lesser known brands that appear in food courts or just potentially less busy areas where you don't compete with the likes of McDonald's and Subway. That's kind of what I think they're trying to do here. Supposedly they're saying that people in Utah are interested in buying Santorini's Greek Grill franchises. Maybe they can be a big fish in a small pond, you never know. You have to start somewhere - this is how Subway started way back in 1965.
It looks like, from this link, that they currently have 4 locations, all in Utah?
