So I've been watching the short interest throughout the day

You're looking at short volume, not short interest. Short volume has mostly to do with market makers buying and selling in the normal course of things. It isn't reflective of actual short positions. Short interest is only released twice a month 11 days after the date. So yesterday short interest data was released for 4/30. On 5/26, we'll know the short interest as of 5/15.
