Think of it as day trading. Day traders buy low and sell high. MMs can buy low and sell high as well, BUT can also sell high and buy low.

Make small amounts wether on the bid or ask. MMs make money no matter what.

Some time ago, I use to work in the foreign exchange markets and use to talk to our borker/dealer/MM everyday. They were like MM herein the pinks. The broker /dealer/MM told me that when I place a bid on a certain currency, the broker will look for someone in their network and match me up with someone on the ask and make $$ of the "spread". Broker/dealer?mm can also "create the market" and be on the ask (hence selling me short). The broker/dealer/MM did mention that they usually or almost always offset their entire position at the end of the day. Now not all broker/dealer are the same (same goes for MMs).

MMs job is to "create a market" and "provide liquidity". MMs take advance by selling short and minipulating the PPS to cover.
