looking into uwink competitors. three questions if anybody knows the answers:

1) "Ruby Tuesdays" has a much higher gross profit margin than "Applebees". Ruby Tuesday's last report show's 43.46% while Applebees shows 21.61%. Their revenues are very similar 1.34 billion (Ruby Tuesdays) to 1.30 billion (Applebees). But the number of employees for Ruby Tuesday is almost half! Does anybody know how many restuarnts each one has?


2) What percentage of their costs include waiters/waitresses/busboys ?

3) What percentage of each restaurant is franchised?
