Like a car, you might not know how long it takes to get to 55mph, but once it does, then you know how fast you are going.

For example, in the USA right now there are only about 1450 "samples" meaning there is a result recovered or deceased. You get the deceased numbers a lot faster than the recovery numbers, there is testing lag, and 3 days after your symptoms are done maybe you are ok now. Deaths are relatively immediate.
