For a really, really, fast growing food franchise, check out Moe's Southwest Grills: founded in 2000, it has a few hundred locations already open, and contracts signed for a thousand more or something.

Point is, for those who were doubting (INCLUDING MYSELF!!) it is very much possible to grow extremely rapidly through franchising, if the concept is unique and exciting. uWink is both, I think. Moe's has a capital investment of around half a million...mmm...
