Wild rabbit is dark meat, but the tame rabbits are all white meat. They sell them at one of our local butcher shops. Last time I looked, they went for around $11. I think it's delicious fried, but not worth the money. When the kids were growing up, I cooked on Wed. We called it redneck Wed.
I'd do my best to come up with something different, but not too far out there. After all, we is high classed rednecks!
Speaking of which, I cut some alligator fillets into strips last night and have them breaded. When I get hungry in a little while, I'm going to blacken them in the iron skillet.
