IMO, you are kinda right? While it is about new culinary concepts, they are calling it a " working prototype ".
To me, that says, a restr. open for business. Also, they reference, " is now serving CUSTOMERS ".
So it would appear that any talk of it not making money is premature.
Unrelated to your post, I did find it quite comical when there was talk about this place being cramped and unappealing. lol
I would suppose that maybe this is the perfect setup for the type of operation that this one restr. is. If your main focus is testing the culinary concepts that are produced, then it is not about the normal setup for maximum profits. Maybe having everyone in a line for easy service and discussion would serve their interest better than standing up at a normal restr. and hollering across a entire room.
I would think that maybe the chef would come out and stand at the end of the table and discuss what their feed back was? But that's just me.
