My diabetes is now in remission

I finally made it.

1. It took switching from the Paleo diet to the Keto diet. With Keto we eat lees fruit and more of some dairy, The dairy part was helpful. I now eat a lot of Greek Yogurt and mix in a few berries. Greek Yogurt is a double winner, very low in carbs per serving and very low in fat as well. I have always liked cottage cheese and the full fat version is very low in carbs and I can really pig out with it.

2. I cut out all processed sugar, with exception of it being mixed in with sauces in foods where I eat out. Such as yesterday I ate at a Chinese buffet. I had some little chunks of chicken with a sauce on it. Yes, I can eat at buffets and go back for a second plate, but my evening meal is Greek Yogurt or something else light. Buffets off a good choice of Keto foods.

3. My morning blood sugar reading is now my nagging wife. If the reading is a bit high, I have to eat less that next day. My morning reading today was a bit high, so today I will be more careful.

Hopefully I will lose a few more pounds, five more would be my goal. That would be in total going from 160 to 137 since March last year. My pancreas fat should be lower and hopefully it will be easier to stay at my desired blood sugar levels.
