To be honest, I usually drink at least one glass a day but when I start to not and get a cold or runny nose, I drink one or two a day and it's usually gone I'm 2-3 days. Michael Pollen ( who used to live right up the road from me) did a recent documentary (The name slips my mind at the moment) about fermentation and how the health benefits are tremendous, he claims many "gluten intolerances" are actually a misconception of breads not being made the traditional way anymore and that the instant yeasts used are no good. True sourdoughs are much better because the yeast breaks it down and it becomes more easily absorbed by the body. He visits a bakery in Housatonic Massachusetts that creates amazing sourdoughs from scratch. Another interesting point he touches on about fermented food is that he says it's the same reason why a dog will bury a bone, the time lapse allows the meat to breakdown and is easier for the dog to digest and is actually healthier for the animal. I'll have to look up the documentary but I thought the part on fermentation was phenomenal.
