Education time....... We do NOT want to have calves. When a dairy cow has a calf they will be out of production line for several weeks if not months. Her mild production will reduce greatly after you wean the calf. The other process is to take the calf away from the cow at birth, which is common, and this is where most of our veal comes from. Even when this is done you still cannot use the milk for at least a week and has to be milked by hand so the milk does not go into the production vat.
