Consumers like convenience, if there is an option to skip a line it will be taken. A perfect example of this is Redbox; granted it is old tech, people would still rather look up where they can get what they want and skip the line and avoid unnecessary employee interaction. Speaking for myself, I prefer using self check-out isles when and wherever possible.
Also, if you go to a liquor store, do you have the option to smell the product before buying it? That is if you drink. It is understood that alcohol is a different industry, but regulated very similarly and sometimes by the same board, as seen in the state of Washington.
To answer your one and only question; if products are labeled as to when they were packaged (like most products are), I would absolutely purchase from a machine instead of waiting in line for an employee. Who I'd probably never care to interact or associate with anyway.
