Hey Robert, hope you and the family are doing well.
That particular batch of roast had me stumped for a bit. First off, it wasn't completely thawed when I was ready to smoke it. You wouldn't believe the amount of effort I went thru to cut the sucker in half. I had to cut it up, just to get it to fit on the racks. I smoked them with apple wood for about 8 hours, then put one half in the slow cooker overnight. I sliced up a couple of onions, and roasted it in apple cider diluted with water, then put a few slices of thick cut bacon on top. My daughter's a vegetarian and said it made the house stink. My son and I are pure carnivores, we disagreed.
It turned out to be the best batch of smoked meat I've made yet. Just think, there's another half in the freezer! Life is good!
