I think in regards to location, I think much like Chuck E. Cheese having a unique concept gets just enough people to seek you out to fill the place. uWink, like Chuck E. Cheese, doesn't need to take over the world to be immensely successful. 19 out of 20 people can laugh at both and say they'll never set foot but that 1 out of 20 that loves it is enough I would think.

In terms of getting strangers to have fun together...alcohol has been doing that for centuries. The town's most successful bar frequently is not the one with the best location - but the one that's most fun. That's certainly frequently true, maybe even more so, with night clubs. Or bowling alleys. Or billard halls. Or even Dave & Busters - probably half or more of the people there the location was immensely bad since they had to travel more than they normally would for a restaurant, sometimes many people half an hour, an hour, or more.

With a unique concept, word-of-mouth will either quickly make it sink or swim in my opinion at least as the concept stands when first opened. You may know instantly how it's going to fly within the first week of opening based on the customer reaction, how long they stay, and the smiles on their faces. I think it's important when first opening to over staff and make sure everything is lightning fast to really wow them on this touch-screen ordering process. One of the key things that people talk about when talking about cruises is that they can order food 24/7 and BAM it shows up like magic at their door fast.
