The best steaks we cook are when we have a camp fire. Season the stakes as you would normally do and let them sit at room temperature. Get a good hot camp fire going, it must be hardwood, no pine. We use hickory, pecan, black walnut or a combination of each. After you have created a bed of red hot coals, you are ready to cook. Just move the logs to the side and place the steaks directly on the coals. For steaks 1 1/4 to 1 1/2 inch thick, leave for around 7-8 minutes then flip and leave for another 3-4 minutes. When I do this for company, they freak out! Start talking about how nasty they will be and how could I ruin such nice steaks... They never complain when they taste them.

If your coals are red hot, they will not stick to the steaks so make sure you have enough red hot coals before you put the steaks on them. You can never have too many coals, only not enough...

If it wasn't for the time and effort to do this, it would be the only way I would cook a steak!
