I feel bad for the folks raising the chickens. They are getting plucked by these low prices.

About a year ago I started seeing warnings about some chicken virus that was going to cause the price of eggs to skyrocket.

Never happened. I'm guessing the poultry cooperative/association/whatever miscalculated.

In the meantime the big commercial bakeries figured out how to use LESS eggs due to the anticipated price increase.

So, now there's less demand than before. They left the new recipes in place!
