It is the variable wireless throttle controller for his water flyboard range.
It allows the rider to control the throttle of the jetski remotely giving much more control to the flyboard user.
It appears to consist of a single trigger. Therefore all it can imaginably control is throttle for a jetski, or in this case thrust for the jet engines.
It is ridiculously expensive last time i looked. Can be found on Zapata racing website, i think there are a few videos trying to sell it onine too.
I have looked on several videos of the Flyboard air - it is the exact same hand held control as for the jetski. He even states so in an interview. Sorry i can not recall which exact interview.

There is a videos of him exceeding 80mph at about 20ft.

My money is on a very talented team of video editors and special effects guys who specialize in creating viral marketing campaigns.
