Reddog65: time lapse photography has demonstrated plants, such as celery, cringing just before a knife slices through its stalk (while it is still in the ground); asparagus still grows, after it is picked. Most sprouts, in salads, are still alive. This is beneficial, healthwise, as this is an excellent natural source of MSM (methylsulfonylmethane [organic sulfur]) and enzymes. Mimosa pudica can die from a nervous breakdown, if handled too much (It's aptly named the sensitive plant.).
