Not sure where you are coming from on this:
what Intel would never do(or is at least supremely reluctant to do) in the realm of co-processors, both slot-type and eventually, on-die.
I would call the SSE engine an On-die co-processor. In terms of off die, the bensley platform includes a TCP-IP offload engine in the chipset, which is really a co-processor as well. PCI-express is the method Intel expects others to use for "slot type" co-processors.

It seems to me Intel is playing in all three arenas, on the CPU, in the chipset, and as an add-in card.
