Because it dilutes the brand name. Anyone who has ever worked in marketing can tell you that. AMD wants companies to think of servers when they think of Opteron, and they have to capture a rather large mind share to do that. If Opteron equals games for some, and servers for others, the CTOs would be embarrassed to even consider it.

If AMD wants an Opteron for gamers, they will rebrand it, say for example, to Athlon 64 Ultra. Same product, but different brand, and they won't lose their credibility.
