Both sides settled. Neither side won.
There is a simple, and obvious answer to the question you pose

Why would Winable DEFENSE SETTLE.

Because settling for peanuts makes more sense than incurring large attorney fees.

A plaintiff that settles, instead of proceeding to judgement, is not certain of winning.

Simple.
