In general, during lab tests a variety of chemical tests can be used to determine their value...
Wet gravimetric analysis
EDTA analysis
Calcium carbonate equivalent ( high quality dolomite can have CCE > 100 )

Sometimes to analyze these rocks instrumental chemical analysis is used. After all once the percent of dolomite ( I guess excluding silica ) in a sample is determined, then the actual value could be determined in detail.

I don't expect this report to be shared with shareholders, all we would be seeing is the "asset" value in dollars....

I am not a lab technician, but I do read a lot of articles of my interest, and I could be wrong.
