You are correct in your understanding of the purpose of ISO.
It is a complete quality system. I went through ISO certification process at my previous employer. It forces you to say exactly what you do and then document in great detail that you did what you said you could do. It covers every phase of your manufacturing process such as matl. quality,machining process control,inspection quality control,calibration of equipment traceable to an internationally recognized standards body etc..
Every critical dimension you say you produce must have proof that it was done.
It took us 2yrs and a million dollars just to adopt all of the systems to achieve ISO certification. It's a big deal.
