The high gluten in today's wheat does not resemble the gluten found in wheat 2000 years ago. Wheat has been hybridized for desirable traits to the point that our digestive tract can no longer tolerate it.

Wheat products are a majority of most American's diet and gluten has a negative impact on everyone that eats it. Some may just not realize the effects until they go through a period where they avoid it and then re-introduce it.
