Five-log reduction: A measurement of the amount of potentially harmful elements removed from a product. And more specifically, it reduces the number of microorganisms by 100,000 fold.

When Harvest Soul, a subsidiary of Fresh Promise Foods, was recently validated for having achieved 5-log reduction in their soon-to-be-launched chewable juice product line, it was a major milestone, and here is why.

Limited shelf life is one of the biggest challenges in getting mass distribution of fresh organic beverages. And one of reasons why most fresh organic juices have a very limited shelf life, is the pathogens that are present. One way to avoid having a high level of those pathogens is via pasteurization, but that process destroys important vitamins and minerals (and enzymes).

Since HPP is being utilized by Harvest Soul, the consumer gets the benefits of a fresh organic juice product, and the retail store gets the benefits of longer shelf life (reducing their cost because there is less product lost due to expiration). Combine a superior product with the marketing experience that Kevin Quirk got as the head marketing guy for the Minute Maid division of Coca Cola, and (excuse the pun) have a recipe for success.
