The economic incentive to grow lettuce in that manner is that lettuce is worthless to the market place after having been dried or frozen. The price of lettuce can rise seasonally enough to make the added expense worth it.
Pot (again, just like corn and soybeans) can be dried, canned, or frozen with absolutely no diminishment in it's quality. Shelf life is a non-factor.
The only economic incentive to grow dope inside, hydroponically is provided by the need to conceal it from law enforcement. You remove that factor, and it no longer makes any economic sense.
