What cut of ribs are you using? I'll guess spare ribs, or maybe St Louis ribs. Try baby back ribs. Ribs are tough, I still struggle with them. One thing you can do to keep meat from getting dry is to keep a pan of water in your grill when smoking, I generally only do this with beef, but I did it yesterday with 2 whole chickens and they turned out great. But remember that will cut your grill temp down.
People will scream about this, but I smoke an extra meaty 1/2 rack about 4 hours at 300 degrees. Make sure you pull that membrane off the back. Alot of people forget that. After about 3.5 hours I will pull the rack off the grill, put it in tin foil, add brown sugar, apple juice and butter, wrap it up and put it back on for the last 1/2 hour. If you follow this you will more than likely have fall off the bone tenderness. Which some people don't like, but that's how I like it.
I would suggest you start with an easier meat though. Try a 5 pound center cut pork loin or bone in pork shoulder. The pork shoulder is cheap and great for sandwhiches, most of it is the darker meat. If you smoke this right, it'll be the best sandwhich your wife ever eats. Your center cut pork loin will not be as smokey cause it doesn't have as much fat on it, and is good to eat sliced. The good thing about this pork loin is that your internal temperature can range all the way up to 205 degrees or so and it's still edible.
As for the smokey flavor you may just want to wrap the meat in tin foil the whole time. By God that will cut down on the smoke flavoring. Most gals don't like a heavy smoke taste. Also you can stop adding wood chips after 1.5 hours. Another thing you can do to keep the smoky taste down is throw it in the oven the last hour. Keep those vetns open more too. If your grill temp get's too hot with tthose open vents, put a can of water in the grill to keep the temp down and add juiciness to the meat.
Like everything else, it takes patience and experience to get good at it, so she's gonna have to hang in there. And every grill is different. You really need to get an internal thermometer that stays in your meat while smoking. If you get one of those it's tough to mess it up.
On ething you have to have is control of your grill temp. Without that you are lost. Most of us guys here in Iowa learned to tell temps just by holding our hand over the grill, and feeling the meat, but it sure is easier with thermometers.
