I'm losing track of the truffles now - hollen has deleted over 20% of the posts, and there is no continuity.
It seems that UBNI is now run by the Urbani family, so it's okay for them to use the marks.
Looks as if Rosario's entirely out of the picture.
I wonder why the UBNI company information still has the Urbani Marks displayed. I mentioned it at least three times to the compiler, hollen the deleter, and he hasn't done anything except delete posts referring to it.
If I was management at UBNI I'd want hollen deposed - he's antagonistic and his power complex is out of control.

No Rosario. So it would seem that he's irrelevant as far as the future of this company is concerned.
I watched a TV program a few days ago, all about finding truffles in France, using dogs. The pig has gone out of favor because it is not a ubiquitous as it used to be, and also it needed high maintenance. The dogs are trained to fined truffles, which involves feeding the pups with truffle-flavored milk. It takes about a year to train a dog.
GRILLED DUCK BREASTS WITH TRUFFLE HONEY
Ingredients:
1 tbs. coarsely chopped rosemary
1 teas. thyme leaves (powdered)
4 garlic cloves
2 large boneless magrets (duck half-breasts; about 1 pound each) skin on (500 grams)
Combine the rosemary, thyme, and garlic on a cutting board and use a large sharp heavy knife to chop them together a few times. Put the duck breasts in a baking dish or other container and rub about 2/3 of the herb mixture over the meaty side. Rub the remaining garlic and herbs over the skin. Cover and refrigerate for about 2 hours.
Prepare a hot fire in a grill (alternately, the duck can be cooked in a stove-top grill pan; preheat it over moderately high heat while you are searing the duck breasts)
Meanwhile, brush the garlic-herb mixture off the duck breasts. Using a sharp knife, score the skin of each breast in a crisscross pattern, cutting almost but not quite down to the meat. Heat a large heavy skillet over moderately high heat until hot. Add the duck breasts skin side down and cook until the skin is lightly golden brown and the duck has released a lot of its fat, 5 to 7 minutes. Transfer to a plate. Reserve the melted duck fat for another use, such as pan frying potatoes, or discard it.
Season the duck on both sides with salt and pepper. Place skin side down on the grill (or in the grill pan) and cook for 4 to 5 minutes, or until the skin is deep golden brown. Turn the breasts over and grill for about 5 minutes longer, or until cooked to rare. Brush the duck skin generously with honey, turn over, and grill until the honey begins to caramelize, 1 ½ to 2 minutes. Brush the meaty side of the breasts generously with the remaining honey, turn over, and grill for 1 to 1 ½ minutes longer. Transfer the duck to a platter, cover loosely with foil, and let rest for 5 minutes.
Transfer the duck breasts to a cutting board, preferably one with a moat to catch juices, and cut the meat on the diagonal into thin slices. Arrange the slices on serving plates or a platter, spoon the juices from the platter and cutting board over them, and sprinkle lightly with fleur de sel. Serve at once. Serves 4.

MINI GRILLED CHEESE SANDWICHES WITH TRUFFLE CHEESE
Ingredients:
6 tbs. Unsalted or lightly salted butter, at room temperature (90 grams)
16 slices of firm-textured white bread, crusts removed
8 oz. Truffle cheese, cut into slices 1/16 inch thick (250 grams/2mm)
Position a rack in the upper third of the oven and preheat the oven to 400° F. Line a large baking sheet with aluminum foil.
Spread 3 tablespoons of the butter on 8 of the slices of bread. Arrange the remaining 8 slices on a work surface and top with the truffle cheese. Top with the buttered slices of bread, buttered side up, and cut each sandwich on the diagonal to make 4 triangles.
Arrange the triangles buttered side down on the prepared baking sheet and brush the remaining tablespoons of butter over the tops.
Bake for 3 to 4 minutes, or until the tops of the sandwiches are beginning to turn golden brown and the cheese is just starting to melt. Using tongs or a spatula, turn the sandwiches and bake for 3 to 4 minutes longer, until the tops are light golden brown. Arrange on a platter and serve. Makes 32

Rosario's failed to pay Urbani and others for Urbani Tartufi products that were received and sold. Throughout 2002 Mr. Safina proposed and promised payment schedules. None of those schedules were ever honored.
In late summer of 2002 the Urbani family proposed to create a new entity as the US distributor, including Rosario Safina as part of the new entity, but providing the Urbani family with financial oversight. At that time Rosario Safina also agreed to execute a number of documents acknowledging the amounts owed for shipments of truffles and truffle-related products and the quality and timeliness of the shipments. He also committed to new payment plans.
Subsequently Rosario refused to stop the unlawful use of the URBANI MARKS; to honor the new payment plans; disavowed the signed acknowledgments of the debts; and refused to be part of the new entity formed to be the exclusive distributor of Urbani products in the United States.
In early March Urbani Tartufi filed suit to stop Rosario's unlawful use of the URBANI MARKS and by early April, Rosario's had not responded to the suit or any settlement overtures.
Faced with Rosario's intransigence, Urbani Tartufi sought to enjoin all of Rosario's unlawful actions. The application for the injunction included the presentation of evidence of the continual use of the URBANI MARKS for more than half of a century in the United States and the presentation of affidavits from witnesses scattered between Pennsylvania and Italy. In approximately one week after Urbani Tartufi went to Court all of the requested injunctive relief was obtained as part of the "Settlement Agreement Constituting the Judgment and Order of the Court." An itemized copy of the Court's Order signed by Judge Allyne R. Ross is available upon request.
Urbani Tartufi's specific financial claim for product shipped and another claim for money lent to Rosario Safina has not been initiated yet. Other claims for product shipped to Rosario's Epicureo, Ltd. are pending in New York federal and state courts.
"I believe the excellent result in the trademark case was a result of the Court holding everyone's feet to the fire," said Urbani's NY lawyer, Raymond S. Fersko. "I assume the same will be required to obtain the money judgments."

On January 31, 2003, a complaint was filed against Rosario's Epicurio
Ltd. by Nuova Casa Del Fungo E Del Tartufo SRL in United States District Court,
Eastern District of New York. The complaint alleges among other things breach of
contract and unjust enrichment against Rosario's. The plaintiff is demanding
$1,024,821.61, together with prejudgement interest, costs, expenses, etc. and
such other relief as the court deems just and proper.
On January 10, 2003, a complaint was filed against Rosario's Epicurio
Ltd. by Cibo Vinum Import SRL in United States District Court, Eastern District
of New York. The complaint alleges among other things breach of contract and
unjust enrichment against Rosario's. The plaintiff is demanding $487,666
together with prejudgement interest, costs, expenses, etc. and such other relief
as the court deems just and proper.
On March 12, 2003, a complaint was filed against the Company by Urbani
Tartufi S.N.C. in Eastern District of New York court. The complaint alleges
trademark infringement, dilution, unfair competition and violation of the
Anticyber Squatting Consumer Protection Act.
Other than above, there are no material legal proceedings pending or,
to the Company's best knowledge, threatened against the Company.
