The ultimate summer fruit is ripe for the picking when it comes to a wealth of health benefits. More than just a refreshing dessert or treat for the hotter days, watermelon is a proven medicinal food at any season of the year.
With the scientific name Citrullus lanatus, watermelon is a fruit that belongs to the Cucurbitaceae family. While native to the Kalahari Desert in Africa, it is cultivated in the world's various tropical regions today.
Watermelons are a much-valued source of antioxidants, particularly lycopene and ascorbic acid, and citrulline, and may help protect against chronic issues such as cardiovascular disease and cancers. [ii] Lycopene gives fruits and vegetables their distinctive red color. In a 2003 study, consuming regular watermelon juice led to significant increases in blood plasma concentrations of lycopene and beta carotene.[iii]
As 92% water, watermelon helps you stay hydrated and this is one of the reasons why fruits and vegetables promote a feeling of satiety.[iv] Interestingly, despite its high water content, a 2011 study highlighted watermelon seeds as a good source of dietary protein.[v] Here are some of the top benefits of watermelons for health and wellbeing.
1. Cancer Prevention
Increased intake of fruits and vegetables was linked to a decreased risk of breast cancer among Chinese women.[vi] The tested fruit and vegetable groups included dark leafy greens, cruciferous vegetables, carrots and tomatoes, bananas and watermelon.
The same inverse relationship between carotenoid-rich vegetables and lung cancer risk was found from the results of the Shanghai Men's Health Study from 2002 to 2009, as well as between vegetables and fruits rich in lycopene and carotenoids and prostate cancer risk in a case-control study conducted in Hangzhou, southeast China.[vii],[viii]
The reduction of cancer risk appears to be due, in part, to the lowering of insulin-like growth factor (IGF), a protein that plays a role in cell division. High IGF levels are associated with cancer.[ix]
2. Fight Metabolic Syndrome
A promising preclinical study in 2007 showed that watermelon pomace, an abundant source of L-citrulline, significantly improved metabolic syndrome in diabetic and overweight animal models.[x] This also helps disprove claims that fruit intake harms people with Type 2 diabetes.[xi]
Watermelon juice in particular showed anti-diabetes potential.[xii] A 2020 study demonstrated that the juice exhibited anti-diabetic action in an experimental diabetic animal model through modulation of glucose transporters, anti-inflammatory activities and an antioxidant defense system.
3. High Blood Pressure and Weight Regulation
Supplementing with watermelon extract had a beneficial effect on arterial function and blood pressure, particularly among obese middle-aged adults with prehypertension or stage 1 hypertension.[xiii]
Watermelon juice also prevented increased post-exercise systolic and diastolic blood pressure in females, but not in males, in a 2019 study.[xiv] "More research is warranted to examine the effect of sex on the efficacy of watermelon consumption for controlling BP," wrote the researchers.
Among prehypertensive individuals, supplementing with the fruit also improved aortic blood pressure and wave reflection, an indicator of arterial function.[xv] Further, with its pro-cardiovascular properties, the lycopene in watermelon was found in studies among obese, postmenopausal women and Finnish men to reduce the stiffness and thickness of artery walls.[xvi],[xvii]
In a 2019 study, consuming two cups of watermelon daily reduced not only blood pressure but also body weight.[xviii] The study compared the effects of consuming the fruit versus a low-fat cookie snack for four weeks on body weight, blood pressure, glucose and insulin levels and biomarkers for inflammation, oxidative stress and liver function.
"As a natural food that provides fiber, micronutrients and bioactive phytochemicals, watermelon may be a healthier alternative to conventional snacks," the researchers wrote.
4. Prevention of Macular Degeneration
Lycopene is found in parts of the human eye and helps protect against both oxidative damage and inflammation. Thus, it may also help prevent age-related macular degeneration, a common blindness-causing condition in the elderly.[xix]
In an experimental study, subjects with low lycopene serum concentrations were at a high risk of macular degeneration.[xx] Lycopene was also seen in a separate study to effectively address immunodeficiency disorders such as HIV and cerebral microangiopathy, a cause of cognitive impairment.[xxi]

JBS pays US$11M ransom to criminal hackers to resolve cyber attack

-- Brazilian meat giant JBS has paid US$11 million in ransom to end a cyber attack that saw its operations hacked and disrupted by “one of the most specialized and sophisticated cybercriminal groups in the world.” The ransom was paid to shield the world’s largest meat processing company from further attacks.
“This was a very difficult decision to make for our company and for me personally,” says Andre Nogueira, CEO, JBS USA. “However, we felt this decision had to be made to prevent any potential risk for our customers.”
JBS, headquartered in São Paulo, fell victim to hackers earlier this month.
Operations were temporarily disrupted and some of its beef, pork and poultry facilities in Australia, Canada and the US were unoperational for the short term. JBS, which produced around one-fifth of the meat supply in the US, was also forced to stop cattle slaughtering at all of its US facilities for one day.
The hack initially caused concern over meat availability and potential price pressure.
However, now JBS has said that it was necessary to pay the ransom money to protect customers and that the sophistication of the attack was very concerning.
During ransomware attacks like this, hackers threaten to delete files unless a ransom is paid in cryptocurrency.
JBS’ subsidiary Pilgrim’s Pride, which is the second-largest US poultry processor, after Tyson Foods, was also impacted by the attack.
Paying cybercriminals in Bitcoin
The FBI stated that this is one of the most specialized and sophisticated cybercriminal groups in the world, according to the latest JBC statement.
During ransomware attacks like this, hackers threaten to delete files unless a ransom is paid in cryptocurrency.
The ransom is believed to have been transferred using Bitcoin.
“At the time of payment, the vast majority of the company’s facilities were operational. In consultation with internal IT professionals and third-party cybersecurity experts, the company made the decision to mitigate any unforeseen issues related to the attack and ensure no data was exfiltrated,” the JBS statement continues.
“JBS USA’s ability to quickly resolve the issues resulting from the attack was due to its cybersecurity protocols, redundant systems and encrypted backup servers. The company spends more than US$200 million annually on IT and employs more than 850 IT professionals globally,” it says.
The White House has also weighed in on the JBS incident, saying that it believes the ransomware attack is linked to a criminal organization that is “likely based in Russia.”
This attack on JBS is the latest in a string of similar hacks focusing on essential service providers, using ransomware where companies are held to ransom for hefty payments to regain control of their operations.

A significant reduction in fasting plasma glucose (FPG), waist circumference and body mass index (BMI) was observed at week 12 compared to baseline in the cinnamon group, however, the changes were not significant when compared to placebo group. There were no significant differences in serum lipid profiles of total cholesterol, triglycerides, HDL and LDL cholesterols neither between nor within the groups.
Conclusions
Intake of 2g of cinnamon for 12 weeks significantly reduces the HbA1c, SBP and DBP among poorly controlled type 2 diabetes patients. Cinnamon supplementation could be considered as an additional dietary supplement option to regulate blood glucose and blood pressure levels along with conventional medications to treat type 2 diabetes mellitus. These findings have been backed up by another study from the University of Toronto that showed even short-term use of cinnamon can reduce blood pressure.
5. 9. Cancer – Many have suggested that sugar is one of the gateways through which cancer emerges and feeds upon. With the above-established positive effects that cinnamon has on blood sugar levels and insulin, perhaps it could aid in cancer treatment? This is exactly what was indicated by a USDA study in 2005 where cinnamon was used as a water-soluble extract from the bark.
These water-soluble compounds are called procyanidins (type A). Another water-soluble component of cinnamon, MHCP (methylhydroxychalcone polymer), was until recently thought to be primarily responsible for cinnamon’s insulin-mimetic properties.

In this case, the researchers used three types of human cancer cells: two representing leukemia and one representing lymphoma. The former disease entails the malignant proliferation of leukocytes, a type of cell found mainly in the blood; the latter entails the malignant proliferation of lymphocytes, the predominant type of cell in the lymph. The idea was to see whether a cinnamon extract could inhibit the proliferation of these cancer cells, and if so, how.
Cinnamon Halted Cell Proliferation by Interrupting the Cell Cycle
The results were striking: over a 24-hour period (the time required for one doubling of the cell population), the cinnamon extract dramatically reduced the rate of proliferation in all three types of cancer cells. It did this in a dose-dependent manner, i.e., the higher the concentration of cinnamon extract, the greater the reduction in proliferation rate. At the highest cinnamon concentration used, the cell counts were reduced by about 50% compared with the untreated control cells.
The fact that cinnamon seems to be beneficial for both diabetes and cancer is one bit of evidence suggesting that there may indeed be a connection between these diseases.
Thus, although the control cells proliferated to about twice their original number during the 24-hour period, only about half as many cinnamon-treated cells as control cells were counted, meaning that their proliferation had been effectively halted—not bad for a common kitchen spice! (Source)

It’s clearly a great addition to your prepper and survival pantry, while providing added protection to your daily meals, or even in your travels. From Cinnamon Vogue:

09 Apr 2021 --- Finnish food tech company Solar Foods is accelerating the production of alternative protein made from air and electricity, edging closer to bringing its pioneering climate-friendly Solein to the plate. This comes after receiving €10 million (US$11.9 million) in funding from The Finnish Climate Fund.
In an exclusive interview with FoodIngredientsFirst, CEO Dr. Pasi Vainikka talks about reaching €35 million (US$41.6 million) in total financing, the development of the company’s demonstration center.
He further details how Solein is now in the commercialization stage, with industrial-scale production of the alternative protein about to get underway.
The subordinated loan now granted will go toward starting commercial-scale production of Solein, which radically reduces the impact of food production on the climate.
Scaling up Solein
“The Finnish Climate Fund is an amazing new instrument by the Government filling a market gap, or failure, where technologies like ourselves need to physically build things,” Dr. Vainikka explains.
“It’s there to help in scaling and infrastructure, investment for production and technologies. Therefore, it’s kind of essential to have it. Otherwise, things might not proceed as they are proceeding now,” he continues.
“There might be a little more funding here and there, but we have raised approximately €30 million now in the last seven months, so we have about €30 to €35 million in the investment program.”
“Now it’s up to us to make it, according to what we promised,” he declares.
Crossing planetary boundaries of food production
Funding Solar Foods was the first investment by The Finnish Climate Fund and helps to keep the company on-track to “turn sci-fi into reality,” as the team produce nutritionally complete protein using carbon dioxide in the air and electricity as its primary raw materials.
The loan will be used to build the demonstrator facility, including the Solein Experience Hub and a future-food bar.
This provides an entirely new level of transparency in food production, notes Dr. Vainikka. This production facility, presently being designed, is scheduled to begin operations in early 2023.
“We are happy that we can soon put the Solein protein on the plates of consumers. Our first production facility will be located in Finland, and it will be the world’s first commercial facility to produce food by using carbon dioxide and electricity as its raw materials,” he continues.
Solar foods operates with the aim to disconnect food production from the accelerating consumption of natural resources.
“It is fascinating to be part of making this happen. We already have detailed plans for the production facility, but we will disclose more about them toward the end of the year when construction begins.”
The most responsible protein in the world?
Solein is a complete protein with all the essential amino acids. It is both light in taste and appearance.
It vanishes into daily meals while at the same time maintaining its rich nutritional value and offering a unified solution that caters to virtually every imaginable meal of today and tomorrow.
The start of industrial production of climate-friendly protein is a significant step toward a more sustainable food production. As a protein source, Solein’s comparative greenhouse gas emissions are approximately 1 percent of meat protein and about 20 percent of plant protein production.
The sustainability impact of the Solein protein, however, reaches even further. Changing the way protein is produced will affect greenhouse gases and the changes in land use, soil impoverishment, biodiversity, and the status of water systems.
Fixing the climate crisis with food
Traditional food production is one of the most immense burdens on ecosystems globally, whereas deforestation caused by food production in developing countries, for example, worsens the climate crisis.
The production process for Solein is disconnected from agriculture, climate and weather. It does not require irrigation systems, pesticides or fertilization any more than it requires animals.
Eventually, Solar Foods’ technology could food to be produced even in extreme conditions in the future: in deserts, in the Arctic, and possibly even in space.
“New technologies open windows into the wall behind which the future exists. We are suddenly seeing possibilities we couldn’t have imagined just a few years ago. The daily production of Solein is already a tangible reality. We at Solar Foods are ‘possibilists’ – we encourage and empower people to be part of the solution, to create a better world through better nutritional choices.”
“Our vision is to change the way food is produced. The world has hope. The food of the future is no longer a utopia, it is already being produced,” Dr. Vainikka says.
To date, Solar Foods has developed more than 20 food products using the Solein protein.
The Solein innovation is rooted in the combined research efforts of VTT Technical Research Centre of Finland and LUT University in Finland.
“In the EU, two years from today, when the demo starts operations, we expect to have regulatory approval. In some other markets, we can be present earlier because we already have one operating facility, which is our pilot facility, and the demo facility will be a copy of that,” he concludes.

AeroFarms, a vertical farming operator, is merging with Spring Valley Acquisition, a publicly traded special purpose acquisition company (SPAC), the companies said in a statement. The transaction will provide $357 million in gross proceeds to AeroFarms and value the new company at $1.2 billion.
AeroFarms, which was founded in 2004, said the merger will provide equity to help it expand its retail distribution and market penetration, construct additional farms, develop new farming technology and enter new product categories. The new company will be led by David Rosenberg, co-founder and CEO of AeroFarms.
The agricultural producer is the latest food manufacturer to turn to a SPAC. Hostess Brands, Utz Brands and AppHavest have all gone public this way, and biltong maker Stryve Foods is expected to hit the public markets following its own SPAC deal.

As the SPAC frenzy continues to infiltrate Wall Street and consumers clamor for more fresh, sustainably grown produce, AeroFarms is picking the right time to go public. The nearly 20-year-old company has built its business on producing leafy greens, and so far has grown more than 550 varieties. AeroFarms’ Dream Greens is currently available throughout the Northeastern U.S. at retailers, including Whole Foods, ShopRite, Amazon Fresh and FreshDirect.
Indoor farming has been inundated with cash from investors seeking to capitalize on what many expect will be a lucrative sector going forward. In the last year, several indoor farming operations have raised significant amounts of money, including AppHarvest, Revol Greens and BrightFarms. AppHarvest, the only one of the bunch to go pubic, has seen its value rise from about $1 billion at the time of its SPAC deal to more than $1.7 billion today.
In each case, the money is being used by the companies to ramp up their businesses and expand their reach in retailers across the U.S. eager to meet consumer demand for locally grown and better-for-you offerings — trends that all have gained momentum during the pandemic. Indoor farms, whether they operate vertically or as large spread out greenhouses like AppHarvest, routinely tout their minimal environmental footprint. AeroFarms is no exception.
AeroFarms achieves up to 390 times greater productivity per square foot annually versus traditional field farming while using up to 95% less water and zero pesticides, the company said. It also has operated as a certified B Corporation and public benefit corporation since 2017. With shoppers placing greater importance in how and where their food is produced, these attributes collectively could be lucrative marketing tools for AeroFarms.
With demand for produce and the way in which it is grown on the rise, indoor farms are in a race to obtain a first-mover relationship with many retailers and consumers. Striking first could pay dividends down the road as stores decide to display their produce in more locations or carry more varieties of their vegetables and fruits.
"?Our business is at an inflection point where we will scale up our proven operational framework and begin our expansion plans in earnest," Rosenberg said in a statement.
To do that, indoor farms need to spend big money now to grow their geographical reach across the U.S., invest in research and harvest more kinds of produce to increase their value to grocers while boosting their own revenue stream at the same time. With most, if not all of these companies still unprofitable and eager for cash to quickly scale their business, a deal with SPAC is an enticing option.
It's also likely these companies will need to take on more debt, or undertake a stock offering, to build their coffers and fund their expansion plans once cash from the SPAC deal dries up. For now, investors are buying into the promise of what the future holds — which for now is promising, but far from certain.

Patrick O. Brown, CEO of Impossible Foods, recently spoke at Web Summit, a virtual conference attended by 100,000 people, about the future of food—which he sees as devoid of all animal products. “Our mission is to completely replace the use of animals as a food technology by 2035. We’re dead serious about it and we believe it’s doable,” Brown said during the conference. “I was confident that we would succeed when I launched this company, and now I’m completely confident. It’s game over for the incumbent [meat] industry—they just don’t realize it yet.”
The beginning of the end
Brown founded Impossible Foods in 2011 and launched the company’s flagship product, the plant-based Impossible Burger, at upscale restaurants in 2016. The Impossible Burger is now on the menu at upwards of 17,000 restaurants nationwide, including major fast-food chains such as Burger King, White Castle, Red Robin, and restaurants within the Disney empire. In 2019, Impossible Burger launched into the retail sector, quickly becoming the best-selling packaged food item at its first retail partner Gelson’s Markets in Southern California. From day one, Brown has held steadfast to his mission of making animal-derived foods obsolete in the next 15 years, a goal the ongoing COVID-19 pandemic quickly moved forward into the realm of possibility.
COVID-19’s impact
The COVID-19 pandemic pushed Impossible Foods to aggressively expand its retail footprint, landing the Impossible Burger at more than 8,000 retail locations, including Kroger, Trader Joe’s, Target, and Walmart by fall 2020. And with plant-based meat more readily available, purchasing habits shifted, with sales of refrigerated plant-based meat sales skyrocketing by 241 percent (compared to last year) during the peak pandemic food-buying period in mid-March and continuing to grow by 113 percent through April.
Meanwhile, the meat industry didn’t fare as well during the pandemic as its workers increasingly contracted the virus while working shoulder-to-shoulder, leading to slaughterhouse closures nationwide in April and meat shortages thereafter. As of December 4, there have been at least 43,000 positive COVID-19 cases tied to meat processing facilities and at least 222 workers have died as a result according to The Midwest Center for Investigative Reporting.
A new food system
Even before the pandemic struck, independent think tank RethinkX predicted in a 2019 report that the animal agriculture industry would fall into a “death spiral” by 2035. To replace it, RethinkX identified a “Food-as-Software” system—similar to what Impossible Foods is currently creating—that is 100 times more land efficient, 20 times more time efficient, and 10 times more water efficient, all while producing significantly less waste.
This month, Impossible Foods released its 2020 Impact Report titled “Turn Back the Clock” detailing how its plant-based Impossible Sausage—the second product it released after the Impossible Burger—is vastly eco-friendlier than raising pigs for pork. Compared to pork-based sausage in the US, Impossible Sausage generates 71 percent less greenhouse gases, requires 41 percent less land area in a year, has a 79 percent lower water footprint, and generates 57 percent less aquatic eutrophication.
“By far, the biggest factor in climate change and the collapse of global biodiversity is the use of animals as a food technology. Nothing comes close. We have to get rid of it,” Brown said. “It’s much more important than replacing fossil fuels in terms of benefits for the world.”
The road to 2035
Throughout the meteoric growth of Impossible Foods, Brown has reiterated that the company is not just creating consumer products but new technologies that will drastically change the way food is produced. After tackling beef with Impossible Burger, the company moved on to pork, the world’s most consumed meat, with the January 2020 launch of Impossible Pork and Impossible Sausage—a formed plant-based pork sausage that is currently offered by Starbucks locations nationwide. In October, the company revealed that it is working on its first non-meat product, a dairy-identical “functional” milk made from plants that it has yet to name. Impossible Foods is also leveraging its knowledge and technology to develop alternatives to shrimp, fish, and whole cuts of meat such as steak.
“What if you could wave a magic wand and make the animal-based food industry disappear? We could turn back the clock on global warming, reverse the global collapse of biodiversity and halt species extinction, deforestation, water pollution, and our public health crisis?” Brown asks. “Our planet needs that magic wand. So Impossible Foods is inventing it—a new technology platform for transforming plants into delicious, nutritious, affordable meat, fish, and dairy foods, replacing the old animal-based technology in the global food system.”
To date, Impossible Foods has raised $1.5 billion in investment capital to fund its mission and recently launched the Impossible Investigator Project, a hiring initiative that will double the number of scientists working at the company to accelerate its mission of disrupting animal agriculture on a global scale.
