Summarizing, Aspartame consists of two amino acids (aspartic acid and phenylalanine) linked by a weak methyl bond. In aqueous solution, the methyl bond quickly breaks, resulting in methanol (wood alcohol) which subsequently is oxidized to formaldehyde, which is extremely toxic to brain cells. The appearance of Alzheimer's in the population coincides with the FDA approval of Aspartame. Initially the FDA refused to approve Aspartame due concerns over its toxicity, but when Donald Rumsfeld became CEO of Searle (the producer of Aspartame), the FDA official who had been blocking Aspartame's approval was replaced, and Aspartame was finally approved.
