Boston Baked Beans



1 lb beans, I used Great Northern Beans
2 1/2 - 3 cups of water, may have to add more water later
1 large onion
1/2 lb bacon
1 tsp salt
1 tsp all spice
3 -4 tbsp dijon mustard
1/3 cup molassas
1/3 cup brown sugar
2 tbsp worcestershire sauce

The night before, dump the beans out on the counter or large tray and go through them, there could be stones in there. Pick out stones and bad looking beans.

Put beans in large bowl and cover with water, soak over night.

Mix all the other stuff except bacon and beans in a bowl

I put 1/2 lb of bacon in the freezer for 30 -45 mins so that it was easy to cut up, I cut in 1/4" pieces and I half cooked it then drained on paper towels to reduce the grease.

If your brow sugar is harder than a rock put some in a bowl and cover with wet paper towel and nuke for 20 seconds, may need to nuke longer.

Put everything in crock pot and cook on high, mine took over six hours. I'd check it at 4 hours may need to add more water to your liking.
