I've seen that done recently on TV. But I'm really not sure I get it. I think the water content is just too high. I get things like grilled peaches, because peaches can also be cooked in other ways. They have a fairly firm texture, and the grill would caramelize them slightly.

You can also cook peaches in other ways. But I don't think anyone cooks watermelon in other ways, which suggests there isn't really any point to it.
