The problem is revenue not cost. I think that COGS ( food cost ) is accurate . Remember the 5 families in NY. No franchisee would sign a franchise agreement either single or multi- unit if they saw an 80% FC. With labor, rent, royalty and misc. expenses they never would see sunshine. What we have is a piggybank pure and simple. If they R/S we are dead.
