LOL- I think the stink bait is made from rotten cheese.

I did a similar taste test with Bluegill, Crappie, Walleye, and Channel Cat. I caught them all the same day, and prepared them in the same batter and fry daddy. I thought the bluegill was the best, the crappie was very close to it. The walleye and the catfish were both very good, and both had a distinctively different taste. I can't say either one was better than the other.

I went to a local restaurant during Lent one year and ordered Blackened Catfish. I don't know how it was fixed? It was the best flavored fish I've ever had.

I've blackened fish in an iron skillet on an open fire and liked it, but never quite got that flavor. A favorite of mine is to bread a fillet in flour and dry cook it in a hot skillet. When it's close to being done, throw in some butter and let it sizzle and crisp up a bit on both sides.

If you have any good recipes, I'd sure like to hear it.
