You didn't know where ribs come from?

In the States, there're basically two kinds of meat that get barbecued: pork and beef. Elsewhere, lamb and goat are popular, but less so here.

And of course there's fish.

The guy who wrote it was inspired by a shrimp pizza he'd recently had. He wondered how it could have been cooked, however briefly, in an 800 degree wood-burning oven without getting tough. So he asked the chef...

And the answer was mayo and baking soda. Science!! Useful for chicken and anything else that might toughen with high heat.
