All this for consideration and not to be considered any kind of professional or MS experience advice. Use at your own risk.
Suggest to set as manual first after attempting to turn off.
If after a few days of use the service hasn't turned itself on or shows running at any time, it may be safe to disable. Any listening service is just as it states, listening usually full time on some port in the background, meaning an open port to be scanned and potentially utilized by hackers.

Apparently anything telemetry by MS, like remote access etc, are routes MS can use to your system in the background. If you don't use remote computer anything, disable all you can. If you need to do a remote then just re-enable the services. Most of the time an error pops up and lists the service that needs to be turned on.

This is stuff I have disabled without issues at this time. Again, experiment with manual when possible and read up each service function.
Also, when the service is grayed out or can't be altered via the service window, almost always there is a registry hack to kill it. This should be done with the utmost care however. Where there's a will there is a way.

All Peer to peer services are disabled. p-to-p opens ports and listener ports in the background and can run full time. PtP is also how MS communicates updates and other background loading crap. It can also be turned off in the settings pages in the update section under update sharing functions.
Peer Name Resolution Protocol, etc etc..

I have remote services disabled for years. All remote services use backdoor ports as part of their makeup and functions. If you don't use any remote-you can safely disable these.
Remote Access Connection Manager, Remote Desktop Configuration, Remote Desktop Services, Remote Desktop Services UserMode Port Redirector, Remote Packet Capture Protocol v.0 (experimental),
Remote Procedure Call (RPC) Locator, Remote Registry, Retail Demo Service, Routing and Remote Access, Shared PC Account Manager.

Remote Procedure Call (RPC) is a system service that should not be altered.
All smart card services are disabled, but get turned on with updates. No functionality problems with them off. 3 smart card services.. Smart Card Device Enumeration Service - etc.

WalletService - an internet access source.
Windows Biometric Service

Windows Insider Service, Windows Mixed Reality OpenXR Service, Windows Mobile Hotspot Service,
Windows Perception Service, Windows Perception Simulation Service.

All telemetry items with the store and update that can be disabled.

MS store junk...
Network Connection Broker
Microsoft Store Install Service, Windows PushToInstall Service
MicrosoftEdgeElevationService
Microsoft iSCSI Initiator Service
HV Host Service
Connected User Experiences and Telemetry

I had disabled everything V-Data as it's about virtual disk and didn't see any problems, however, MS resets these back to manual. I've left them at manual until further research.
Hyper-V Data Exchange Service amongst others in sequence.

Update junk...disabled hasn't caused operating problems.

Microsoft Update Health Service, Windows Update, Windows Update Medic Service, Windows Modules Installer

This from more than one source should not be installed on any home windows system.

Net.Pipe Listener Adapter, Net.Tcp Listener Adapter, Net.Tcp Port Sharing Service

Anything with a trialing group of letters/numbers/symbols looks to be locked as well. Can not change from Services.
ex: OneSyncSvc_3ae88

Stay safe Newly.
