In Europe they raise fish in ponds (mostly carp) and the feed and the water quality such that the fish would taste nasty. What makes the fish "saleable" is the conditioning of the fish after they are netted from the pond and transferred to vats of fresh, cold water and held there for 2 weeks. (Without feeding)
The nasty flavor of the mucky feed and water has time to be eliminated from the fish.
I don't think the farmed catfish I've tried do that, they always tasted yucky. (And farmed trout I've tried too)
