The different types of triglycerides in fats
High triglyceride blood readings are red flags for obesity, diabetes, and heart health issues. Most dietary fats contain long chain triglycerides (LCT), which are not easily metabolized and can be stored as fatty deposits in one's body.

How can you avoid the "not-so-good" coconut oils? Appearances can be deceiving, that is if you don't know what to look for. When looking for the best quality oil the appearance is very important. The second thing you look for in a high quality coconut oil is purity.
If you are familiar with coconut oil you know it naturally has a high melting point. At 76 degrees F and lower it become solid, at higher temperatures it turns into a liquid. It's much like butter, when it's in the refrigerator its solid but if left out on a hot day it melts.
High quality virgin coconut oil should be snow white in color when it is solid and water clear when liquid. If you see any shade of yellow or gray it is of an inferior quality. Pure coconut oil is colorless. Any discoloration is a sign of contamination. Contamination can be from mold or smoke residue.
If old or sun-dried coconuts are used to make oil it will almost always contain mold. The mold isn't considered harmful because temperatures used in processing are high enough to essentially sterilize it. If the heat used comes from open flames from wood or gas fuel smoke can be absorbed into the oil.
The third thing to look for in a high quality coconut oil is aroma and flavor. Virgin coconut oils should always retain a coconut smell and taste. If not, they have been highly refined. If they have no flavor they are essentially RBD oil, even if they did come from fresh coconut.
The very best virgin coconut oils do not have a strong roasted or smoky taste or smell. They should have a very mild coconut aroma and flavor. The flavor should not be overpowering, but just mild enough to enjoy without altering the flavor of the foods it's used with.
The fourth criteria is price. You get what you pay for. Obviously, a very inexpensive oil is going to be of inferior quality. The cheapest oils are the most disagreeable tasting, and usually tainted with residual contaminants.

Infections: Coconut oil is very effective against a variety of infections due to its antifungal, antiviral, and antibacterial properties. According to the Coconut Research Center, coconut oil kills viruses that cause influenza, measles, hepatitis, herpes, SARS, etc. It also kills bacteria that cause ulcers, throat infections, urinary tract infections, pneumonia, and gonorrhea, etc. Coconut oil is also effective on fungi and yeast that cause candidiasis, ringworm, athlete's foot, thrush, diaper rash, etc.

Liver: The presence of medium chain triglycerides and fatty acids helps in preventing liver diseases as they substances are easily converted into energy when they reach the liver, thus reducing work load on the liver and also preventing accumulation of fat.
Kidney: Coconut oil helps in preventing kidney and gall bladder diseases. It also helps in dissolving kidney stones.
Pancreatitis: Coconut oil is also believed to be useful in treating pancreatitis.

HIV and Cancer: It is believed that coconut oil plays an instrumental role in reducing viral susceptibility of HIV and cancer patients. Preliminary research has shown indications of the effect of coconut oil on reducing the viral load of HIV patients (Reference).
Finally, coconut oil is often preferred by athletes and body builders and by those who are dieting. The reason behind this being that coconut oil contains lesser calories than other oils, its fat content is easily converted into energy and it does not lead to accumulation of fat in the heart and arteries. Coconut oil helps in boosting energy and endurance, and enhances the performance of athletes.
Coconut Oil and Alzheimer's Disease: There are reports of research conducted by Dr. Newport stating that coconut oil is useful for treating Alzheimer's disease. Apart from this there is no scientific evidence or traditional knowledge or coconut oil being used for treating Alzheimer's. It was also not known traditionally that coconut oil helps in the brain function.
Why is Coconut Oil Solid?: Unlike most other oils, coconut oil has a high melting point - about 24 to 25 degress Celcius or 76-78 Farenheit. Therefore it is solid at room temperature and melts only when the temperatures go high. Hence, if you buy a bottle of coconut oil and find it solid, don't think that there is some problem with it. Coconut oil is like this only. And of course, don't keep it in your refrigerator.
How to Use Coconut Oil?: If you are using coconut oil for topical purposes, especially hair care, just melt the oil (if it is solid) by keeping the bottle in the sun or warm water. You can also take some coconut oil out and put it in a small bowl and heat the bowl over a flame (do not use microwave). Then take the oil on your palm and apply it to your hair. If you want to use it for internal consumption, simply replace butter or vegetable oils with coconut oil in your recipes. Remember, you need not switch to coconut oil completely, as you will miss the benefits of other oils and dairy products.
Can I Use Coconut Oil for Cooking?: Yes, in most of the tropical coastal regions, people use coconut oil for coooking.
I Don't Like the Taste of Coconut Oil. What Should I do?: Try using coconut oil in some different recipe. That may help. If you get nauseated after eating coconut oil, don't force yourself. As it happens with any other food item, your body may be allergic to coconut oil and it is best not to consume it.

I’ve been wondering just how many readers remember Carmen Miranda and Jerry Collona. I’ve wondered too how many readers might remember the Swedish film (best in Swedish with English subtitles) “My Life As A Dog”.
These may be two confusing questions and I know you’d ask what does either one have to do with health.
The answer is coconut.
You see at one time log ago Carmen and Jerry did a song together that Jerry was quite famous for singing solo. That song was one I liked a lot as a child, “I’ve Got A Lovely Bunch of Coconuts”. It is one I have fond memories of singing hundreds of times as a child.
I am a forever fan of the Swedish film, “My Life As A Dog”. In the movie, Ingemar, played by the young star, Anton Glanzelius, enjoys the coconut song too.
What the song has to do with health, of course, is the lovely coconut.
In this day and age of proselytizing the cholesterol myth, thousands of healthy and ill people are told they must take these drugs.
Some fantasy I’d say because for the most part these drugs that have gouged your pocketbook and your health for some twenty plus years still haven’t shown any real benefit.
Now don’t get me wrong, there are some good things that cholesterol can do for you if you can get past the marketing hype.
Your body depends on cholesterol to help you make hormones, communicate between cells, and repair damage to your cardiovascular system.
Cholesterol is an important substance that circulates with the help of the lipoproteins you know as LDL and HDL.
LDL, or the one you most likely have heard called ‘bad’ cholesterol helps carry cholesterol to your cells for healthy cell wall membranes (the thing that keeps cellular contents wrapped up where they belong). LDL helps with other cellular functions too.
HDL, or the one you know as the ‘good’ type acts like a mop to sweep up extra circulating cholesterol from your blood, transports it to your liver, where it is on its way to being excreted from your body.
In reality, keeping this all in balance to the key.
There are quite a few things you can do to keep members of this cholesterol family in balance. Mostly though mainstream medicine hasn’t given you a clue.
Most in the know will tell you that eating with the Mediterranean food plan and more fiber will do wonders for your cholesterol balance. That Mediterranean diet has been around and recommended as far back as the 1960s to keep a healthy heart.
Rice bran oil is another helpful substance because it contains the nutrient gamma oryzanol that helps keep cholesterol from being absorbed from your gut.
Then there’s that lovely bunch of coconuts.
Coconut oil as many are now learning is one of the healthiest of all natural oils, especially for any high temperature cooking you do. Another constituent of coconut that contains coconut oil but also a lot of fiber as well is what is called ‘coconut crème’.
From time to time I get product samples to test and review. Not too long ago I received some organic coconut crème and got to thinking about just exactly what I was going to do to try it out.
One good thing is that this is organic coconut crème.
After some thinking it dawned on my that I should try it made up as coconut milk. I don’t use much in the way of dairy products and sometimes you need some ‘milk’. I hadn’t been too happy with some brands I found in the stores, these just tasted thin and watery for the most part. These also all contained carrageenan which is a toxic thickener manufactured from seaweed.
After eating a spoonful each day for a few days I decided to test this crème blended up as milk.
It was great! And it solved my sourcing problem. Now I just make up a quart at a time using distilled water and one heaping tablespoon of the crème. Even though the label says one teaspoon, what works best in flavor and texture for me is the tablespoon.
The with the festive season underway and my love of fresh cranberries I just fell in to a recipe that ended up being really tasty and enjoyable. Can’t beat the antioxidant combination and enzyme help from the little red berry this time of year.
For the raw foodists you will like this I’m sure but I think its great for any one and filling too. You can make this as a pie, roll into snack size balls, or come up with your own way of making it special.
Start with 12 ounces of fresh, room temperature cranberries, washed and sorted to remove any spoiled ones. Put them in a high speed blender or food processor along with 1 cup of filtered water, 1 cup of coconut crème (ask me for my favorite choice), ½ cup of liquid coconut oil, a pinch of pure sea salt, and vanilla to taste. Blend until well processed.
I added about a half of a cup of raw pecans but you could choose flaked coconut for a more intense flavor.
When this mixture is smooth and creamy pour into a pie pan and refrigerate for a few hours or over night. Cut into portions and enjoy.
While this isn’t too sweet, you can add some dates to the mix or pour some pure maple syrup or nicely whipped cream on top.
The good part is that it is really good, and it isn’t even my recipe. The other good part is that it is made up of things that naturally benefit your health and help keep your cholesterol level in balance.
Coconut oil and coconut crème both benefit your heart and your health. These natural substances do protect your body from depositing unhealthy fats in your arteries. Quite the contrary, using soy, corn, canola, or other vegetables oils lead to the production of trans fats and this is what does the damage.
If you already have balanced, high, or low cholesterol, using natural coconut products you may benefit with your LDL/HDL ratio moving in the most favorable direction.
Keep this in mind, because now that food has been declared off limits for improving health by the CODEX authorities, it may come to pass that I won’t be able to say any of this again in the future.
13 Evidence-Based Medicinal Properties of Coconut Oil

While coconut oil has dragged itself out of the muck of vast misrepresentation over the past few years, it still rarely gets the appreciation it truly deserves. Not just a "good" saturated fat, coconut oil is an exceptional healing agent as well, with loads of useful health applications.
Some examples of "good" saturated fat include
Fat-burning: Ironic, isn't it? A saturated fat which can accelerate the loss of midsection fat (the most dangerous kind). Well, there are now two solid, human studies showing just two tablespoons a day (30 ml), in both men and women, is capable of reducing belly fat within 1-3 months.
Brain-Boosting: A now famous study, published in 2006 in the journal Neurobiology of Aging, showed that the administration of medium chain triglycerides (most plentifully found in coconut oil) in 20 subjects with Alzheimer's disease or mild cognitive impairment, resulted in significant increases in ketone bodies (within only 90 minutes after treatment) associated with measurable cognitive improvement in those with less severe cognitive dysfunction.
Clearing Head Lice: When combined with anise spray, coconut oil was found to be superior to the insecticide permethrin (.43%).[ii]
Healing Wounds: Coconut has been used for wound healing since time immemorial. Three of the identified mechanisms behind these healing effects are its ability to accelerate re-epithelialization, improve antioxidant enzyme activity, and stimulate higher collagen cross-linking within the tissue being repaired.[iii] Coconut oil has even been shown to work synergistically with traditional treatments, such as silver sulphadizine, to speed burn wound recovery.[iv]
NSAID Alternative: Coconut oil has been demonstrated to have anti-inflammatory, analgesic and fever-reducing properties.[v]
Anti-Ulcer Activity: Interestingly, coconut milk (which includes coconut oil components), has been shown to be as effective as the conventional drug sucralfate as an NSAID-associated anti-ulcer agent.[vi]
Anti-Fungal: In 2004, 52 isolates of Candida species were exposed to coconut oil. The most notorious form, Candida albicans, was found to have the highest susceptibility. Researchers remarked: "Coconut oil should be used in the treatment of fungal infections in view of emerging drug-resistant Candida species."[vii]
Testosterone-Booster: Coconut oil was found to reduce oxidative stress in the testes of rats, resulting in significantly higher levels of testosterone.[viii]
Reducing Swollen Prostate: Coconut oil has been found to reduce testosterone-induced benign prostate growth in rats.[ix]
Improving Blood Lipids: Coconut oil consistently improves the LDL:HDL ratio in the blood of those who consume it. Given this effect, coconut oil can nolonger be dismissed for being 'that saturated fat which clogs the arteries.'
Fat-Soluble Nutrient Absorption: Coconut oil was recently found to be superior to safflower oil in enhancing tomato carotenoid absorption.[x]
Bone Health: Coconut oil has been shown to reduce oxidative stress within the bone, which may prevent structural damage in osteoporotic bone.[xi] [Note: Osteoporosis is a Myth, as presently defined by the T-Score]
Sunscreen: Coconut oil has been shown to block out UV rays by 30%. Keep in mind that this is good, insofar as UVA rays are damaging to the skin, whereas UVB rays are highly beneficial (when exposure is moderate). Make sure to check this list of other sun-blocking oils.
Of course, when speaking about coconut oil, we are only looking at one part of the amazing coconut palm. Each component, including coconut hull fiber, coconut protein and coconut water has experimentally confirmed therapeutic applications.

Well, if you are interested in anti-oxidants in your diet, how about avoiding the things which oxidize in the first place.
Corn oil and vegetable oils: Are the primary offenders and linked to some forms of cancer and fibromyalgia.
Olive oil: Excellent served cold, but free radical city when cooked. Use only COLD-PRESSED, organic and 100% extra virgin olive oil (see Willy’s comment above about extra virgin oils, very sharp!) Anything that is not cold pressed will be high in free radicals, which means more rapid spoilage as well as oxidation within your body. The extra money is just plain worth it. Health is wealth, as they say. (Trader Joes and Whole Foods have organic cold-pressed olive oil, in their own house brands, fairly inexpensively).
Sunflower, grapeseed and coconut oil have a high smoking point. Therefore, they are best oils for stir-frying, because prior to smoking they are less likely to form free radicals during cooking.
Recent research about coconut oil indicates that it got a bad rap: It does not, as formerly believed, raise cholesterol levels. The reason is that it has medium chain triglycerides (compared to other saturated fats which have longer triglycerides, which are harder to digest). Because the medium chain fats are easier to digest and assimilate, they don’t tend to form arterial plaque as easily as other longer-chain fats. In fact, native islanders who eat lots of coconut, have lower rates of heart disease than most countries (though I did ask Naturopathic Doctor/researcher Michael Murray this question: These people also eat lots of fish. Could this be the reason, since they get a fair amount of Omega 3s in their diet? He replied that experiments had been done on Americans and other nations too, proving that coconut oil by itself does not raise cholesterol levels as formerly believed).
Crisco is unmentionable! Whipped toppings? Good lord. Margarine: Heart disease went rampant just within ten years of it being manufactured. The reason: Hydrogenated fats are almost impossible to digest. They form arterial plaque much more readily than whipped cream or butter. Any “light” recipe that uses these ingredients, claiming to be more heart-healthy than their buttery counterparts, is a confession of ignorance. Don’t fall for this trap. Go with butter mixed with olive oil for lightness instead. Or mix with non-GMO canola oil, which really does taste buttery in itself.
FYI recent naturopathic thinking is that it’s not cholesterol itself, but oxidation thereof which causes heart disease. Anti-oxidants may be one key to prevention.
If bile is flowing from your liver in healthy proportions, you shouldn’t have much trouble breaking down most healthy fats (not hydrogentated! Avoid these like the plaque).
However, where the low-fat myth does hold water is:
a) Animal fats break down to inflammatory prostaglandins. This leads later on to heart disease, cancer (particularly of the colon) and arthritis, and other degenerative diseases. (Though there are many causes for all of the above, with these animal proteins and fats being one contributor).
b) Animal proteins break down to ammonias in the body, which in turn break down cell tissue and reduce immunity, lead to inflammatory states and are less than good for us.
However, only animal proteins and spirulina or chlorella supply vitamin B12, the lack of which can cause anemia. We need the animal proteins for this nutrient, unless lots of spirulina is used by vegetarians, alongside a good vitamin B12 supplement. The anemia can be masked, because the blood can test high for iron yet be low in B12, leading to a hidden case of anemia. Vegetarians please take note.
Healthy fats from fish and olive and other good oils will strengthen the cell walls and aid cellular respiration, thus protecting from some of the ammonias from meat products. If the liver and kidneys are in good health, and lots of healthy oils are eaten, and meats and eggs and milk are done only in moderation, then you are probably fine.

What shelf stable item can be used (nutritiously) in place of butter, shortening, and cooking oil, and then pressed into duty as a health and beauty aid?
Coconut oil!
One of my favorite pantry items is my big jar of organic virgin coconut oil, and the crazy thing is, I don’t even like coconuts. If you slip me a cookie that has those nasty little flakes of coconut in them, I’ll probably spit it out – I really, emphatically don’t like coconut! I am stressing this point because coconut oil has a place in the kitchen of even the most die-hard coconut hater (like me!).
Sometimes people who are seeking a healthier lifestyle make the mistake of avoiding all fats. Sure, eating a bag of Doritoes covered in cheese is terrible for you (in more ways than just the fat content!) – but certain fats can be a healthy, and very necessary, part of your diet. In fact, these “healthy fats” can actually aid in weight loss, if that is your goal. Some examples of these healthy fats would be those from nuts, avocados, seeds, certain fish, and coconut oil. Consumption of these fats will improve your hair, your skin, your immune system, and your organ function when consumed in moderate quantities. As well, certain nutrients are fat soluble and can only be properly used by your body in the presence of fat. For example, Vitamins A, D, E, and K should be taken when you eat a small amount of fat.
All coconut oils are not created equally. There are a few basic types of coconut oil, and it’s important to get the “right” kind for your needs in order to reap the full benefits of your purchase.
Refined or Unrefined?
First, you’ll need to decide between refined and unrefined. This relates to the process of extracting the oil.
A refined coconut oil is separated by heat. Refined coconut oil is more heat-stable and can be used in cooking methods like frying. Many people opt for refined coconut oil because it is flavorless and odorless. The shelf life of a refined coconut oil, according to the expiration dates is 18 months to 2 years. A refined coconut oil loses some nutritional benefits but how much really depends upon the refining process that is used.
Expeller Pressed: This is the traditional method of extracting coconut oil. No chemicals are used in this method – the oil is extracted by a machine which physically presses out the oil, then is deodorized by distilling it with steam. If you opt for a refined oil, look for “expeller pressed” on the label.
RBD: The RBD (refining bleaching deodorizing) process often uses chemical solvents like hexane to extract the oil. (Hexane is a toxic chemical that can be used to dissolve adhesive, cement and glue.) This process is generally performed on previously dried coconut kernel called copra, which is often made from lower quality or old coconuts.
An unrefined coconut oil is also called virgin or extra-virgin coconut oil. This oil has the light scent and flavor of coconut, which disappears somewhat when used in cooking. This type of coconut oil has the most nutritional benefits and the shelf life has been documented as anywhere from 2-5 years, to “indefinite”.
Health Benefits
The number one health benefit of coconut oil is that about 50% of it is lauric acid, an essential fatty acid that is only otherwise found naturally in such high levels in human breast milk. The human body turns lauric acid into monolaurin, which contains antiviral, antimicrobial, antiprotozoal and antifungal properties, so basically, it boosts your immunity in every possible way.

Storage and Shelf Life
Coconut oil has a melting point of 76F/24C. If it is stored above that temperature it will be a liquid, and below it will be a solid. It doesn’t harm the coconut oil to be in the liquid state – keep in mind that coconuts originate from a tropical climate. The shelf life will be extended if the product is stored in a cool, dark place, however, if you store it in the refrigerator it will be rock hard. You can soften it by placing the closed jar in a pan of hot water.
If you are purchasing a large quantity of coconut oil (for example, a 1-5 gallon bucket) use a sterilized, completely dry spoon or scoop and dip out enough oil for regular use. I keep a 1 pint jar of coconut oil in the bathroom and a quart jar in the kitchen.
As mentioned elsewhere in the article, the shelf life declared by the coconut oil companies ranges from 18 months-2 years for refined coconut oil, and 2 years-4 years-beyond for virgin coconut oil.
How to use Coconut Oil in the Kitchen
Coconut oil can serve many purposes in the kitchen. If you use virgin coconut oil it will impart a very light coconut flavor to your cooking, but it isn’t really comparable to the flavor you get from adding flaked coconut. I suggest you get a small jar to test it out before investing in quantity, because there’s nothing worse than making a large investment in something that you find distasteful.
For the best results, raise or lower the temperature of your coconut oil to reach the consistency of the item you are replacing. For example, if you are baking and the recipe calls for shortening, briefly chill the coconut oil until it is a firm consistency. You can use coconut oil in place of:
Butter (use 25% less coconut oil than the amount of butter called for)
Shortening
Vegetable oil for cooking
Vegetable oil for salad dressings
Lard
You can also make popcorn in coconut oil over popcorn for a lightly flavored sweet treat.

This is the way coconut oil first made its way into my home – the cosmetic uses! When I was searching for a lotion and moisturizer that didn’t contain nasty parabens and petroleum products, while also being safe on my daughter’s extremely sensitive skin, I discovered coconut oil. The pleasant scent is an added bonus. We use it in many different ways.

Because it is a nutritional gold mine, coconut oil is a very worthwhile substitute for many of the fats commonly used in our kitchens. I have limited storage space, also, so I like to store things that can serve many uses.

Olive Constituent Blocks Alzheimer's and Breast Cancer

Two recent studies have found that a constituent of olives and olive oil inhibits the growth of breast cancer and the development of Alzheimer's disease.
The breast cancer research comes from scientists at the King Saud University. The researchers treated human breast cancer cells with a constituent of olives known as Oleuropein. The testing found that Oleuropein produced genetic changes among breast cancer cells that serve to inhibit their ability to metastasize and grow throughout the body.
One of the two key genetic changes influenced by the Oleuropein was the inhibition of the matrix metalloproteinase (MMP) enzymes. These MMPs – specifically MMP2 and MMP9 - usher the process of metastasizing. The MMP enzymes were blocked, effectively inhibiting the spread of the cancer.
The Oleuropein extract also stimulated a genetic expression of the TIMP gene. When these genes are expressed, through a polymerase chain reaction, tumor growth is halted.
The researchers concluded that: "Treatment of breast cancer cells with oleuropein could help in prevention of cancer metastasis by increasing the TIMPs and suppressing the MMPs gene expressions."
In a separate study – this from researchers from Greece's National Center for Scientific Research – Oleuropein was found to inhibit the development of brain cell amyloid-beta protein precursor along with ß-amyloid (Aß) metabolism. Aß metabolism has been linked to causing long-term memory loss among elderly persons.
The researchers treated human cells that had become subjected to the growth of ß-amyloid protein complex – duplicating what occurs within the brain of someone developing Alzheimer's. They treated the cells with Oleuropein and found that the olive extract interacted with the amyloid proteins in such a way that halted the Aß metabolism process. In this case, Oleuropein stimulated MMP-9 activity amongst these amyloid-beta complexed cells. Increasing MMP-9 activity helps reduce the amyloid-beta oligomers amongst these cells.
The researchers concluded that: "The experimental data reveal an anti-amyloidogenic effect of Oleuropein and suggest a possible protective role for Oleuropein against Alzheimer's disease, extending the spectrum of beneficial properties of this naturally occurring polyphenol."
While olives contain a number of polyphenols, Oleuropein is one of the best known. Other polyphenols within olives and olive oil can include hydroxytyrosol, tyrosol and verbascoside.
Along with these benefits, Oleuropein has been found to dilate the blood vessels, reducing blood pressure and increasing bloodflow. Olive's high level of antioxidants also gives it a tremendous anti-inflammatory capacity, especially among the cardiovascular system. Olive leaf has been found to be antiviral. It appears to inhibit virus' ability to replicate, preventing viral shedding and budding within the cells and cell membrane.
Olives are also rich in a host of other beneficial nutrients, including copper, vitamin E and iron. The olive also contains a unique monounsaturated fatty acid called oleic acid. Olive oil also contains linoleic, palmitic, stearic and linolenic fatty acids. The combination of fats in olive helps balance pro-inflammatory fats such as saturated fats and arachidonic acids in other foods.
This blend of fatty acids, along with its antioxidants, gives olives and olive oil its proven ability to reduce the risk of cardiovascular disease and help prevent inflammatory diseases such as arthritis.
Olive oil comes with a variety of labels, including virgin or extra virgin. Virgin oil must maintain a standard of less than 1.5-2% acidity (depending upon the country or origin), while extra virgin must maintain less than 0.8% acidity. A misnomer is that extra virgin is supposed to be from the first pressing. Rather, oil manufacturers find that certain seasonal pressings of certain olive varietals will produce the desired lower acid levels.
Many also assume that extra virgin oil utilizes only a mechanical press, but virgin olive oil also must be mechanically pressed. This contrasts to using chemical solvents to extract the oil. Most conventional vegetable oils are chemically extracted, while most olive oils are mechanically pressed. It should be noted that some mechanically pressed olive oils are blended with others to achieve the lower acidity - which is regulated by the Italian, Greece and government agencies.
In addition, high quality extra virgin olive oil is typically cold pressed, because it is mechanically pressed and utilizes less heat in the process. Most of the high quality extra virgin olive oils are cold pressed. Mechanical cold pressing helps preserve some of the heat-sensitive polyphenols and other nutrients contained within a fresh olive.
Pickling olives in a vinegar solution is one of the easiest and more delicious ways to preserve the polyphenol content of fresh olives.

Pain Relieving Coconut Oil Arnica Salve Recipe

One of my goals for health and wellness is to avoid using anything that contains petroleum products. Once you start paying close attention to the ingredients in many common hair and skin care products, you will find that there is almost always some form of petroleum product listed. Petroleum products are refined from crude oil – a crude oil that is very toxic nonetheless. It can be refined into a number of products, such as mineral oil, petroleum jelly, petrolatum, paraffin waxes, microcrystalline waxes, and more, all of which are very common ingredients in skin and hair care products.
Petroleum products harm your skin and your body, because they:
Coat the skin like plastic wrap, disrupting the delicate acid mantle and the good bacteria that protect our skin from germs.
Hinder the skin’s exposure to oxygen and other nutrients needed for proper detoxification and repair.
Are not water soluble, so they attach to your cells and build up in your body. They are very difficult for your body to eliminate.
In addition, the 1,4-dioxane (which is not listed on ingredient labels), is a petroleum-derived chemical that is often found in sudsing items like body wash, bubble bath, and shampoos. This chemical has been listed as a possible carcinogen by the International Agency for Research on Cancer (IARC). Meanwhile, the National Toxicology Program (NTP) has identified 1,4-dioxane as a “reasonably anticipated carcinogen”. These are all very good reasons to make more of your health and beauty products at home, where you control the quality, and the safety, of the ingredients.
Arnica salve is a staple in my home. We use it on sore muscles, bruises, sprains, strains, and more. I recently found that I was out of the salve and in my journey to find more, I quickly realized that all of the brands at my local stores contained petroleum products in some form. I was so disappointed, because even at the health food stores, petrolatum (a form of petroleum) was still one of the first ingredients. I knew right then that I needed to make my own.
I wanted to make sure that the balm I made was going to give me the biggest bang for my buck, so I consulted with one of my dear friends, who happens to be a trained herbalist with many years of experience in making her own products. She gave me some tips and advice and these two recipes were born. Both salves are in a base of coconut oil and beeswax.
Many people know that arnica montana is an herb that is widely used for topical pain relief. It has been used in homeopathic medicine for hundreds of years. For this recipe, we are using the dried herb, which should never be consumed internally. This salve is designed to help reduce inflammation and pain through application on the skin. Arnica has been known to stimulate blood circulation, and can help soothe and alleviate pain from bruises, sprains, arthritis, and sore muscles. The first recipe in this post is a simple lavender peppermint arnica salve, which is great for general use, with a calming, soothing scent.
Cayenne, which is added to the second recipe, is another herb that has long been used for medicinal purposes. Cayenne is promoted as a circulatory stimulant and has been used in salves for healing infections, shingles, rheumatoid arthritis, and osteoarthritis. As a matter of fact, most commercial arthritis creams contain capsaicin, a compound from cayenne. When applied topically, it does not have the same fiery effect that it does when consumed internally. It should still be used with caution and you should be careful not to touch any mucous membranes after applying. I use a small spoon to apply to my skin, so that I’m not covering my hands in cayenne. I use this on achy joints (like knees and wrists), as well as sore muscles.
The other ingredients in the salves are essential oils, which can be adjusted to suit your own preferences. I chose lavender and peppermint because that is a very soothing and calming scent combination. You could also add some eucalyptus or tea tree oil if you’d like. For the cayenne salve, rosemary works well, but it is completely optional.
I make these in big batches so that I have enough to share with family and friends. Feel free to cut the recipe in half if you think it will be too much. You can find the dried arnica flowers at any local herb shop or online. The instructions for both salve recipes are the same.
Coconut Oil Arnica Salve
2 cups coconut oil
.6 ounces dried arnica montana flowers
½ cup beeswax granules (scant)
¼ tsp. peppermint essential oil (optional)
¼ tsp. lavender essential oil (optional)
Coconut Oil Arnica Cayenne Salve
2 cups coconut oil
.6 ounces dried arnica montana flowers
3-6 tbsp. dried cayenne powder
½ cup beeswax granules (scant)
½ tsp. rosemary essential oil (optional)
Tools Needed:
A double boiler or crock pot
Cheesecloth, old cotton t-shirt or cotton pillowcase
Bowl, Mason jar, etc.

Instructions:
1. Since you are using dried arnica, you will get best results if you can allow the arnica flowers to steep in the coconut oil for 12-24 hours. I used a double boiler and kept my stove on the lowest setting possible. Some people prefer a crock pot, and using this method will allow you to let the herbs steep for a longer period of time.
2. When you first get the arnica, whiz it gently in a food processor to start bruising the flowers. You could also use your hands to crunch the flowers up. This will help the flowers start to break down and make the infusion of arnica happen a little faster.
3. Place the dried arnica into your double boiler or crock pot. If you are making the cayenne salve, add the cayenne to the arnica at this time.
4. Pour two cups of coconut oil over the arnica (and cayenne, if applicable) and stir to ensure that all of the flowers are completely submerged in the oil. You don’t want any leaves sticking out.
5. Cover and let infuse on low heat (warm setting on the crock pot) for 12-24 hours. You can stir it every so often if you desire. Keep an eye on it to make sure all of the arnica stays submerged and also to ensure that it doesn’t get too hot.
6. When the allotted time has passed, turn off the burner or crock pot and let the mixture cool for an hour or so. You don’t want it to completely cool, as the coconut oil could start to solidify (depending on where you live), but you want it to be cool enough that you don’t burn yourself.
7. Place your cheesecloth, t-shirt, or pillowcase over your bowl, jar, or measuring cup. Carefully pour the coconut oil into the cheesecloth and let the mixture drain into the bowl below. If it’s not too hot, you can pick up the cheesecloth and squeeze the oil through the fabric to speed up the process.
8. Once you have strained out the herbs, you can place the filtered oil back into your double boiler. Make sure you wipe out the double boiler to make sure there are no clumps of herbs left in there. Turn the heat on low.
9. Add your beeswax and whisk until completely dissolved. The scant ½ cup of beeswax will yield a very soft salve. If you want it firmer, you can add more; softer, you can add less. You can test the texture by dipping the back of a metal spoon into the mix and then allowing to cool and applying to your skin.
10. Once the beeswax is melted, remove from heat and let cool for about 30-60 minutes. Stir in your essential oils and then pour into whatever containers you desire.
11. Use the salve on tired, aching muscles, bruises, sprains, arthritis, etc. NOTE: for the cayenne salve, use caution when applying and avoid applying to your face. If you are concerned with pepper residue on your hands after applying, you could also use gloves, or apply with a spool or small spatula. I personally use a spoon.
