I disagree. You are taking an incremental approach the article below talks about. I also recently posted an article about the Organic Coup. In the article, when talking about their growing pains, they state: "Sourcing product is what CUESA executive director Marcy Coburn anticipates will be The Organic Coup's biggest challenge moving forward".

That is exactly why you bring on Executive Chef, Greg Schroeppel. He knows how to scale. This hire wasn't for the existing two restaurants.
