I don't have a slow cooker. But I think they'd be perfect for cooking caramelized onions. I love caramelized onions, but if you cook 'em on the stovetop, it takes quite awhile, and you have to watch them constantly.
Much easier in a crockpot, evidently. You just throw 'em in, and 10 hours or so later, they're done. According to this recipe, they freeze well:
