Cheesy Onion Mash Potatoes

5 lb russet taters
5 slices Velveeta cheese
1 small onion chopped up
Butter and milk

Wash taters and cut them in half and boil until done. I don't peel them because I have a ricer.

When taters done just mash everything together. I use a hand masher until they are the consistency that the electric hand mixer can handle, then mix with electric mixer until smooth.

Ok, mashed taters done, damn I love that ricer, will let them cool before I bag and freeze. I use the flimsy cheap fold over sandwich baggies then I put them in a freezer bag. I put the baggie in a short cup so I can spoon in the taters.

Just in case anybody is interested the ricer is a Browne potato ricer, it come with the 3 discs with different size holes. There are cheaper ones out there but I like this one because it is stainless steel.

I may add some garlic powder next time I make them.

To make fancy ones, put mashed taters in a casserole dish put strips of cheese on top and sprinkle with bacon bits, bake until cheese melts.
