A simple Lentil and Bacon soup my Di taught me...smile

All measures are pretty much guesstimates lol

8 oz red lentils, soaked in boiling water for an hour
3 sticks celery, chopped
1 onion, chopped
2 carrots, grated
1 potato, grated
2-3 cloves of garlic, crushed
4 oz smoked bacon or bacon lardons
1.5 pints chicken/vegetable stock
1 oz butter
Cream or milk
salt and pepper to taste

Soften the onion in the butter, add the smoked bacon, crushed garlic and chopped celery.
Stir over a gentle heat until the bacon is cooked thru.

Add the chicken stock, the drained lentils, grated carrot and grated potato. Slowly bring to the boil and then let gently simmer for at least 30 mins.

Liquidise/blend the ingredients, then add either the cream or milk...optional...I like it chunky so I don't do this step..

Salt and pepper to taste
heat through and serve.....enjoy..
